海洋生物保鲜剂OP-Ca抗菌特性的研究

摘    要:研究生物保鲜剂OP-Ca的抗菌特性,并与低分子甲壳胺的抗菌效果进行了比较。结果表明该保鲜剂对多种细菌,霉菌和酵母菌有抑制作用,且抑菌效果强于低分子甲壳胺,该保鲜剂对根霉的MIC为0.0215%。对枯草芽孢杆菌的MIC为0.043%。对白色念珠菌的MIC为0.043%。对枯草芽孢杆菌,白色念珠菌,脂肪芽胞杆菌及假单胞杆菌等细菌的杀菌率超过95%《此外,并考察了高温处理及pH变化对该保鲜剂抗菌性的影响。

Abstract:The anti-microbial properties of OP-Ca preservative have been studied. The results showed that the preservative could inhibit the growth of most of the bacteria, fungi and yeast. MIC of OP-Ca preservative to Phizopus. sp, Bacillus subtilis and Candida albicans are 0. 0215% , 0. 043% and 0. 043% respectively. The bactericidal rate of OP-Ca preservative on Bacillus subtilis , Pseudomonas sp . B. stearothermophilus and Candida albicans are more than 95%. The effects of pH value and temperature on the antimicrobial activity of the preservative have also been studied.
