纤维素酶辅助酸法提取菠萝皮果胶的工艺研究

摘    要:目的考察影响酸法提取菠萝皮果胶的主要因素,并确定酸法提取果胶的最佳工艺条件。方法通过正交试验,考察料液比、提取温度、提取时间和提取酸度对菠萝皮果胶提取的影响,从而得到最佳的提取工艺。结果纤维素酶辅助酸法提取菠萝皮果胶的最佳工艺条件为:料液比1:20,提取温度80℃,提取时间60min,提取pH2.0。结论纤维素酶辅助酸法具有提取率高、速度快、溶剂用量少、安全、节能、设备简单等优点,试验为优化菠萝皮果胶的提取工艺奠定了基础。

Abstract:Objective To inspect the main factors of acid extraction of pineapple peel pectin, and determine the best process conditions of acid extraction of pectin. Methods Through orthogonal test, inspected the effects of solid-liquid ratio, extraction temperature, extraction time and extraction acidity on the extraction of pineapple peel pectin to get best extraction process. Results The optimum conditions of cellulase assisted acid extraction of pineapple peel pectin : solid-liquid ratio of 1 : 20, extraction temperature of 80℃, extraction time of 60 minutes, extraction pH was 2.0. Conclusion Cellulase assisted acid extraction method has advantages of high extraction ratio and speed rate, less solvent, safety, energy-saving, simple equipment. The study laid the foundation to optimize the extraction process of the pineapple peel pectin.
