山药饮片无硫加工工艺研究

摘    要:目的:探讨山药饮片无硫加工工艺.方法:采用单因素考察、正交设计等方法,确定最佳护色液.通过对山药多酚氧化酶性质的研究,综合评价分析pH值、温度、底物浓度、酶液浓度等对多酚氧化酶的影响,为山药的无硫加工即护色液的选择提供参考,为深入研究山药的无硫加工工艺提供理论依据.结果:通过对怀山药加工前后的色泽测定,对比分析山药加工前后色泽的变化,选择白度为工艺筛选指标,以此为指标对无硫山药加工工艺进行筛选.护色液的组成是1.5%的柠檬酸、2.5%氯化钠、0.5%氯化钙.结论:护色液浸泡为无硫山药最佳生产方法.

Abstract:Objective:To explore the sulfur-free processing technology of Dioscorea opposita thunb pieces. Methods:Single-factor and orthogonal design methods were used to determine the best color protection solution. Through researching the polyphenol oxidase property of Dioscorea opposita thunb, overall evaluating and analyzing the impacts of PH, temperature, concentration of substrate, concentration of enzyme on polyphenol oxidase, so as to provide reference for the selection of sulfur-free processing of Dioscorea opposita thunb ( color protection solution), and provide theoretical foundation for deeply researching the sulfur-free processing technology of Dioscorea opposita thunb pieces. Results:Through determining the contents of color in Dioscorea opposita thunb before and after processing, comparatively analyzing the change of color and luster of Didscorea opposita thimb before and after processing, and screening the optimum sulfur-free processing technology of Dioscorea opposita thunb according to the index of whiteness of Dioscorea opposita thunb. The composition of color protection solution was 1.5% citric acid,2.5% sodium chloride and 0.5% calcium chloride. Conclusion:Color protection solution soaking method is the optimum producing method of sulfur-free Dioscorea opposita thunb.
