2010年三门峡市食品中食源性致病菌污染监测

摘    要:目的了解三门峡市食品中食源性致病菌的污染状况及分布,为预防和控制食源性疾病提供依据。方法按照GB4789-2010食品卫生微生物学检验》方法及《河南省食源性致病菌作业指导书》技术要求进行增菌、分离、鉴定及菌种保存。2010年对市区及辖区县农贸市场、超市食品进行沙门菌、单增李斯特菌、副溶血性弧菌、金黄色葡萄球菌、空肠弯曲菌、大肠杆菌O157等致病菌进行抽样监测,共132份。结果 132份样品中共检出致病菌12株,总检出率为9.10%(12/132)。其中单增李斯特菌检出5株,检出率最高(3.80%),其次为金黄色葡萄球菌检出4株(3.03%)、副溶血性弧菌2株(1.52%),沙门菌检出1株(0.76%),未检出空肠弯曲菌和大肠艾希氏菌O157。10大类食品中,速冻米面制品和生鲜肉污染率最高,分别为25.00%和16.70%。结论三门峡市居民消费食品中存在食源性致病菌污染,其中速冻米面制品、生鲜肉、凉拌菜、沙拉和冰激凌是主要污染食品品种,单增李斯特、金黄色葡萄球菌、副溶血性弧菌和沙门氏菌是污染食品的主要病原菌。

Abstract:Objective To investigate the situation and levels of main food-borne pathogens bacteria in food in sanmenxia city and to provide scientific basis for prevention and control of food-borne diseases.Methods Total 132 samples of food were collected and analyzed for the occurrence of Salmonella,listeria monocytogenes,Vivrio parahaemolyticus,Staphylococcus aureus,Campylobacter and Escherichia coli O157:H7.Results 12 pathogens were inspected from 132 samples,total positive ration was 9.10 %,which include 5 listeria monocytogenes(3.80 %),4 Staphylococcus aureus(3.03 %),2 Vivrio parahaemolyticus(1.52 %),1 Salmonella(0.76 %),no Escherichia coli O157:H7and Campylobacter was found.Among 10 types food,quick-frozen rice and flour products,fresh meat were contaminated seriously.Conclution Food-borne pathogens bacteria was found in sanmenxia residents consumption,the main contaminated food types were quick-frozen rice and flour products,fresh meat,Chinese cold dish in sauce,salad,icr cream.The main food-borne pathogens were listeria monocytogenes,Staphylococcus aureus,Vivrio parahaemolyticus,Salmonella.
