湖北省食源性致病菌污染状况调查分析

摘    要:目的 了解湖北省食品中食源性致病菌的污染状况及其趋势。方法从2000年开始对湖北省食品中食源性致病菌进行了监测。在9个监测点采集8类共2488份食品样品.按常规方法分离鉴定沙门氏菌.O157:H7。单增李斯特氏菌、弯曲菌、副溶血性弧菌。结果5种食源性致病菌在湖北9个地区都有污染存在,以沙门氏菌污染率最高(5.8%)。其次是单增李斯特氏菌(3.5%)。在监测的8类食品中,以生肉类食品污染率最高(20.3%)。而这类食品中又以生鸡肉污染最为突出(28.%)。结论湖北省食品中食源性致病菌污染趋势有明显上升。应引起有关部门的重视。

Abstract:Objective Surveillance was conducted in Hubei province since 2000.(Methods) To find out food contamination by pathogenic bacterium and its trend in our province.2 488 food(8 categories) samples were taken in 9 surveillance spots.Routine method was used to isolate and identify Salmonella,E.coli O157,Listeria,Camplobacter,and Vibrio parahaemolyticus.(Results) The 6-year investigation showed that there were food contamination by all the five pathogenic bacteria,among them,Salmonella contamination was the highest(5.8%),followed by Listeria(3.8%).Of the eight types of food,the heaviest contamination was caused by uncooked meat (20.3%),especially uncooked chicken(28.0%).Conclusion The 6year surveillance suggests that food contamination by pathogenic bacteria in Hubei is significantly increasing and calls for more attention by concerned departments.
