蔬菜水果的抗氧化活性与总黄酮含量的相关性

摘    要:目的]研究蔬菜、水果的抗氧化活性与总黄酮的相关性。方法]采用Ferric Reducing Antioxidant Powerassay,FRAP法和分光光度法测定了51种蔬菜和30种水果的抗氧化活性、总黄酮含量,分析它们之间的相关性。结果]蔬菜的抗氧化活性与总黄酮之间的相关系数为0.398,水果的抗氧化活性与总黄酮之间的相关系数为0.710。结论]蔬菜、水果的抗氧化活性与总黄酮含量具有一定的相关性,但不同种类的蔬菜和水果,相关性有一定的差异。
