摘    要:目的:了解台州市区主要消费食品中食源性致病菌的污染状况,寻找本市引起食源性疾病的重点食品,对可能发生的食源性疾病进行预测和预报。方法:按国家标准方法,对采自市场上的8类食品进行5种食源性致病菌的分离与鉴定。结果:466份样品中检出致病菌201份,平均检出率为43.1%;8类食品中,以贝壳类的污染最严重,其次是散装熟肉制品、生肉类;副溶血性弧菌检出率为54.5%(109/200);金黄色葡萄球菌检出率为13.9%(44/316);单增李斯特菌检出率为10.8%(34/316);沙门菌检出率为4.4%(14/316);未检出EHEC O157:H7。结论:台州市市售食品中食源性致病菌污染较为严重,贝壳类、熟肉制品、生肉类是主要污染食品,应加强细菌性食源性疾病相关危险因子的研究分析,做好食品安全预警预报工作。

Abstract:Objective:To learn the polluted status of food borne pathogenic bacteria in main consumption of food in Taizhou,predict the food-borne disease and explore the main food that caused the food-borne disease.Methods:Five kinds of food borne pathogenic bacteria were isolated and identified in 8 kinds of food colleted from the market,through the national standards methods.Results:The positive detective rate was 43.1 %(201/466).The polluted status in shell was the most serious,the cooked meat and raw meat products in bulk were in disorder.The positive detective rate of V.parahemolyticus was 54.5%(109/200),Staphylococcus aureus was 13.9%,L.monocytogenes was 10.8%(34/316),Salmonella bacteria was 4.4%(14/316) and EHEC O157:H7 was not detected.Conclusion:The polluted status of food borne pathogenic bacteria in main consumption of food in Taizhou was serious.The shell,cooked meat and raw meat products in bulk is the main polluted food.The study on risk factors of food-borne disease and the predictive warning on food safety should be enforced.
