2001-2008年滕州市企业食堂食(饮)具消毒检测结果分析

摘    要:目的]了解我市厂矿企业集体食堂食(饮)具卫生状况及消毒效果,提高消毒合格率。方法]以大肠菌群纸片法作为判定依据,按GB14934~94《食(饮)具消毒卫生标准》进行采样、检验和评价。结果]2001年最低。2007年度最高,1季度合格率高于其他季度,蒸气消毒效果好于其他消毒方法,非承包经营食堂食(饮)具消毒合格率高于承包经营食堂。不同年份、不同季度、不同消毒方法、不同经营方式食(饮)具消毒合格率差异均有统计学意义(P〈0.01)。结论]我市企业食堂食(饮)具消毒合格率较低,影响食(饮)具消毒效果的因素是多方面的,食(饮)具消毒工作是一项长期的任务,应加强对该项工作的监督管理。

Abstract:Objective]The study was conducted to investigate the sanitary status and sterilization effect of tableware in the enterprise canteens in Tengzhou, to improve qualified rate of tableware disinfection. Methods]Sampling, testing and evaluation were done according to the national GB 14934-1994 standard,by the slip diffusion method. Results]The eligible disinfection rate varied with the years, the season, methods and different management patterns, and the differences were statically significant( P 〈0.01). The eligible disinfection rate was the highest in 2007. it is higher in the first quarter than in the other three quarters, the best effect was by the steam disinfection. And the rate was lower in the contracted managerial canteens than those not contracted managerial.Conelusion]The eligible disinfection rate of tableware and utensils in the enterprise canteens in Tengzhou city was low,the factors influencing tableware disinfect effect were multifaceted, and tableware disinfection was a regular work. we should strengthen supervision and management to them.
