2017年泸州市195份食品中化学污染物及有害因素检测结果分析

摘    要:目的 了解泸州市食品中主要化学污染物及有害因素的污染水平和趋势, 分析食品安全风险隐患并确定危害因素的分布和可能来源。方法 根据2017年四川省食品安全风险监测项目要求, 从泸州市各食品 流通环节购买食品样品, 按照《食品卫生检验方法》、《食品安全国家标准》和《2017年国家食品污染和有害因素风险监测工作手册》和《食品中化学污染物及有害因素监测技术工作手册》的相关检测方法对农药、兽药、非食用物质、元素、食品添加剂、禁用药物、食品加工贮藏过程产生的污染物、生物毒素等19大类94个项目进行检测, 检测结果依据GB 2761-2017、GB 2762-2017和GB 2763-2014等相关标准进行评价。 结果 共检测食品类样品195份, 其中189份合格, 合格率为96.92%。不合格率最高的食品为水发产品, 有4个样品中甲醛超标; 谷物及其制品(小麦)有2个样品中玉米赤霉烯酮(zearalenone, ZEN)超标。结论 泸州市2017年195份食品样品中化学污染物及有害因素检测指标合格率较高, 但个别食品仍存在较高的安全风险, 应采取针对性措施进一步继续加强重点环节监管, 确保我市食品安全。

Abstract:Objective To understand the pollution levels and trends of major chemical pollutants and harmful factors in foods in Luzhou City and analyze the hidden dangers of food safety risks and determine the distribution and possible sources of harmful factors. Methods According to the requirements of the 2017 Sichuan food safety risk monitoring project, food samples were purchased from various food circulation links in Luzhou City, 94 items in 19 categories including pesticides, veterinary drugs, non-edible substances, elements, food additives, banned drugs, pollutants produced during food processing and storage, biotoxins, etc, were tested by the related method in the Food hygiene inspection methods, National food safety standards and 2017 National food pollution and harmful factors risk monitoring workbook and Working manual for monitoring chemical contaminants and harmful factors in food, and the test results were evaluated according to relevant standards such as GB 2761-2017, GB 2762-2017 and GB 2763-2014. Results A total of 195 food samples were tested, of which 189 were qualified, and the pass rate was 96.92%. The food with the highest unqualified rate was waterishlogged food products, and formaldehyde exceeded the standard in 4 samples. There were 2 samples of cereals and their products (wheat) with zearalenone (ZEN) exceeding the standard. Conclusion The qualified rate of chemical pollutants and harmful factors in 195 food samples in Luzhou city was high in 2017, but there were still high safety risks in individual foods. Targeted measures should be taken to further strengthen the supervision of key links to ensure food safety in our city.
