摘    要:涂膜保鲜是一种简单、安全、造价低的果蔬贮藏保鲜技术, 成膜材料对保鲜的效果起着决定性作用。植物源涂膜保鲜剂具有来源广、活性高、安全性好等特点, 是一种新型、高效的果蔬涂膜保鲜剂, 有着广泛的应用前景。本文分别对植物源多糖、蛋白质、脂质以及中草药提取液类涂膜保鲜剂的主要成分、基本特性及在果蔬保鲜上的应用进行了简单介绍, 分析了植物源涂膜保鲜剂在应用中存在的难题和相应的解决方法, 并对发展趋势进行了展望。

Abstract:Coating preservation is a simple, safe and economic method among the fruit and vegetable storage and processing technologies. The new and efficient plant-resource coating for fresh fruits and vegetables which is characterized in wide sources, high activity and good security, has a broad application prospect. Based on the introduction of main components, basic properties and application of plant-resource coating agents, including plant polysaccharide, protein, fat and extracts of Chinese herbal medicine, existing problems of plant coating preservation were proposed and analyzed. Furthermore, developmental trend of coating preservation was also envisioned.
