| 摘 要： | 目的 了解昆明市售花生、芝麻酱的菌相组成情况及其微生物污染风险。方法 将16份昆明市售花生、芝麻酱进行增菌培养后, 取增菌液进行DNA的提取, 然后进行基于16S rRNA的宏基因组测序和分析。结果 细菌主要来自于厚壁菌门和变形菌门, 共检测出了40个细菌的属, 其中包含多个含有致病菌的属。农贸市场采集样品中检测到的细菌属种类显著高于超市采集的样品。结论 昆明市售花生、芝麻酱存在一定的微生物污染风险, 农贸市场所售该类产品较超市产品存在较大污染风险, 应引起重视。
