| 摘 要： | 食品中有毒有害物质是存在于食品或食品原料中对人体有毒的或者具有潜在危害性的物质。食品中有毒有害物质严重危害食品安全,可引起人体代谢紊乱,进而导致疾病的产生。近年来由食品中有毒有害物质导致的食物中毒事件层出不穷,引起各国政府、国际组织、学术机构和消费者的高度重视。本文对食品中有毒有害物质的种类、危害及污染现状及检测方法进行了综述,并对食品中有毒有害物质的未来工作进行展望。尽管我国食品中有毒有害物质仍然影响我国食品安全,但是随着我国检测水平、加工技术及监管力度的迅速提升,食品中有毒有害物质将得到有效控制,极大地提高我国食品安全水平。

| Abstract: | Hazardous and noxious substances in food threat food safety seriously. They lead to a lot of food poisoning. It is highly stressed by many governments, international organizations, academic institutions and consumers. This paper reviewed in detail the category and harmfulness of hazardous and noxious substances in food. Related standard as well as statute were analyzed and future task was also forcasted finally. |
