摘    要:维持菌体细胞内PH值的稳定是乳酸菌的重要生理需要之一。确定了在菌种的生长繁殖与保存中,酸性环境会使菌体内不能维持近中性PH值,从而降低其存活的可能性,降低发酵的活力。总结了酸性环境对菌体细胞生理的特殊影响,阐述了菌体内PH值为多种新陈代谢活动的控制器,并且探讨了乳酸菌在低PH值环境中的自我保护措施。

Abstract:To lactic acid bacteria,to regulating their cytoplasmic pH is one of the most important physiological requirments.During growth or storage in acid environment,cells may lose viability resulting in the decrease of culture activity.This review describes the physiological changes of lactic acid bacteria in low pH environment and reports the latest progress of research work on the means by which lactic acid bacteria defend against low intracellular pH.
