摘    要:采用4种不同型号的实验磨研磨不同硬度的小麦,通过激光粒度仪测试小麦粉的粒度。结果表明,不同小麦粉的粒度差异较大,尤其是细小粉粒的分布很不均衡。采用光辊心磨的实验磨磨制的小麦粉,其细粉比例高于齿辊实验磨,但低于生产线小麦粉的细粉比例。小麦硬度越高其细粉比例越低。

Particle Size Distribution of Wheat Flour Ground by Different Laboratory Mills
Abstract:Wheat with different hardness was ground by four different types of laboratory mills. Particle size of different kinds of wheat flour obtained was analyzed by a laser particle size analyzer, The results showed that the obtained wheat flour was different in particle size distribution ; especially the fine and small particles were distributed quite unevenly. The volume of fine flour ground by the mill with smooth roll was higher than that of the mill with fluted roll. but lower than wheat flour from a production line. The percentage of fine flour deceased with increased of wheat hardness.
