摘    要:叶酸是促进母体内婴儿正常生长发育和防止心血管病和肿瘤等不可或缺的一种维生素,其开发与应用已成为世界强化食品研究与开发的热点。本文主要介绍了果蔬中叶酸的结构、特性、提取方法,重点阐述了几种叶酸检测技术的原理、方法和适用范围,并比较其优缺点,最后对叶酸的研究方向和应用前景作了简要阐述。

Abstract:Folic acid is one of vitamines for human to enhance the baby growing in the parent substance and protect cardiovascular disease,tumor,and so on.The research and application of it in functional food have been of great importance nowadays.This paper firstly introduced the structure,properties and the extraction techniques of folic acid in fruit and vegetable,focused on the principles of several detection methods and scope,and compared their advantages and disadvantages.The research directions and application prospects of the folic acid were also discussed.
