摘    要:红曲是将红曲菌(Monascus spp.)接种于大米等淀粉类原料并经发酵的传统发酵产品。我国是红曲的发源国,也是全球最大的生产国。红曲产品按其用途可分为色曲、功能曲和酿造曲等,在食品、药品和化妆品中广泛应用,经济价值较高。标准具有确保产品工艺和质量的属性,是保障消费和贸易安全的文件。我国自1985年实施首个红曲标准以来,目前已发布了32个相关标准,对促进红曲产业发展起到了重要作用。该文在梳理了中国红曲标准发展历程的基础上,重点解析了色曲、功能曲和酿造曲的产品标准以及红曲特有评价参数的方法标准,并分析了其发展趋势,可为我国红曲相关标准的修制订工作提供借鉴和参考。

Abstract:Monascus is a traditional Chinese fermented product of starchy foods such as rice inoculated with certain Monascus spp.China is the originator and the largest producer of Monascus product in the world.Monascus product had high economic value due to its wide application in food,medicine and cosmetics,and it can be classified as colorants,health care products and brewing starters according to its usage.Standard is the document for protecting the safety of consumption and trade by its attributes of product process and quality specification.In China,the issued 32 standards about Monascus product had played an important role in promoting the development of Monascus product industry since China implemented the first Monascus standard in 1985.In this review,the development of Chinese standards related with Monascus product was discussed,the standards about colorants,health care products and brewing starters,and the method standards about the specific parameters were focused,its development tendency was also analyzed to provide a reference for the standard construction and revision in the future.
