摘    要:介绍了复合调味品的产生及发展过程,现主要采取现代技术,将理想的风味物质提取或萃取出来,合理配制成高档的复合型调味品;复合调味品的特殊风味和口感,按原料分为成味料、鲜味料、香辛料、香精料、着色料和油脂等,并介绍了复合调味品含有氨基化合物、脂类物、维生素、无机盐、微量元素、蛋白质、淀粉和糖类物质等营养物质。在复合调味品复合多味的变化过程中,论述了复合调味品独特的风味、口感与营养源物质之间的关系,进而展望了复合调味品的发展前景。

Abstract:This article introduces compound condiment's production and its development.With modern technique,the useful flavor materials are extracted and composed into superior compound condiment.Compound condiment has various special flavors and tastes.According to different raw materials,they can be divided into salty condiment,delicate condiment,spicy condiment,essence condiment,coloring condiment and fatty condiment etc.compound condiment is rich in nutrient,such as amino compound,grease compound,vitamin,inorganic salts,trace element,protein,starch and carbohydrate etc.The relationship between compound condiments'flavor and its nutritional sources are emphasized and the prospect of compound condiment is also forecast in this article.
