| 摘 要： | 介绍了国内各地黄酒麦曲的特点,有草包曲、踏曲、挂曲、笸曲、散曲、传统宁波熏麦曲、纯小麦白酒高温曲、纯种生麦曲、纯种熟麦曲,有加一味中药或多味中药的药麦曲等。各地有自己独特的制麦曲方法,有待于我们进一步去挖掘,并进行保护和发扬光大;药麦曲是酿造保健黄酒的一个方向。
