| 摘 要： | 在食品安全监督检验体系积累的大量分析测试数据的基础上,本研究构建出食品安全风险监测的体系与流程,并对引起食品安全的风险因素的风险可能性及其风险损失度进行综合评估,建立起以风险可能性与风险损失度为二维矩阵的食品安全风险监测模型。运用该模型对某城市大型农副批发市场的食品安全状况进行监测,可有效地对市场流通领域的食品安全状况进行把握和控制,保障市场食品供应的质量安全。
