摘    要:为了探讨生物制剂对于浓香型白酒高级醇产生的影响,调控高级醇的产量,采用实验室模拟固态发酵的方法,通过添加生物制剂,测定高级醇的产量,利用正交试验、二次多项式逐步回归和响应面分析法,建立生物制剂添加量同白酒中高级醇生成量的关系。结果表明:添加活性干酵母0.8%、糖化酶1 000U/g、α-淀粉酶50U/g时,高级醇总量比空白降低了21.06%。构建的数学模型,可以预测不同干酵母、α-淀粉酶、糖化酶的添加量时高级醇产量,从而达到在既满足浓香型白酒应有风味的同时,又能有效地调控高级醇产量,提高浓香型白酒的品质的目的。

Abstract:In order to investigate the impact of the higher alcohols of biological agents for the liquor,and to regulation of higher alcohol production,laboratory simulation of solid-state fermentation by the addition of biological agents was used and determinate the yield of higher alcohols.Orthogonal test,quadratic polynomial stepwise regression and response surface methodology was used to establish the relationship between biological agents added with yield of higher alcohols.The results showed that higher alcohols was reduced 21.06% than the blank which added 0.8% yeast,1 000 U/g glucoamylase and 50U/g α-amylase.The mathematical model can predict the amount of dry yeast,alpha-amylase and glucoamylase with higher alcohols production,so as to achieve at the same time should not only satisfy the Luzhou-flavor liquor flavor,and can effectively control the higher alcohols production to improve the quality of the Luzhou-flavor liquor.
