湿度对白肋烟晾制的影响

摘    要:2001~2003年在湖北省恩施市进行了不同湿度下的白肋烟晾制试验。从等级比值、外观质量、内在品质等方面综合比较,晾制各阶段晾房内适宜的相对湿度范围分别为:凋萎期76.8%~81.1%、变黄期72.5%~81.6%、变褐期71.4%~73.5%、干筋期41.7%~61.7%。在此湿度下白肋烟晾制期为5~6周;调制的烟叶等级率较高,上、中等烟比例平均分别为42%和45%。上部和中部叶综合评吸得分分别为80.03和86.55,达到中等和中偏好档次,烟叶香气质、香气量、刺激性、燃烧性均优于高湿和低湿处理。烟叶颜色较深,呈近红黄至红黄,光泽好,组织疏松,叶面皱缩,颗粒状物质多,质地柔软。

Abstract:The air-curing experiments of burley tobacco at different humidity were conducted in Enshi City of Hubei Province during 2001-2003. The tested tobacco was evaluated comprehensively in terms of grade, apparent and smoking quality. The suitable ranges of relative humidity in curing barn in the stages of wilting, yellowing, brown- ing and vein drying were 76.8%-81.1%, 72.5%-81.6%, 71.4%-73.5% and 41.7%-61.7%, respec- tively. The curing period was 5-6 weeks, the average proportions of high and middle grades of cured leaves were 42% and 45%, respectively; and the sensory test results showed that the aroma, flavor, irritation and combustibility of leaves were better than that of the leaves cured beyond the said humidity ranges.
