Abstract:To improve the shelf-life of peanut oil,different concentration(0.2%~20%) of DHA from algal oil was added to the peanut oil.The stability of DHA after cooking at low temperatures was evaluated and the influence of algal oil DHA on the sensory quanlity of peanut oil was studied;The results showed that,the peanut oil containing 0.2%~20% of DHA can be stored at 62 ℃ for 28 days,without ancid flavor.Compared to no heating,the DHA content of 20% DHA-containing peanut oil(DHA 20%) was unchanged after cooking at 100 ℃ for 20min.If cooking at 160 ℃ for 20min,however,the DHA content might be slightly decreased.And high levels of DHA had no significant impact on the taste and smell of peanut oil.
