摘    要:本文根据影响食品品质的5个因素:微生物、酶、氧化、呼吸和机械损伤,论述了冰箱保鲜技术是冰箱的本质技术。通过分析作者得出结论:冰箱保鲜技术将是冰箱研发的一个最重要的方向,是冰箱技术回归冰箱本质技术的必然。

Abstract:According to the 5 factor effecting food quality (microbe, enzyme, oxidation, respiration, mechanical damage), this article discusses the essential refrigerator technology to keep food fresh. It is concluded that the refrigerator technology keeping food fresh will be most important direction of research and development of refrigerator and that is certain when the refrigerator technology comes back to its basic technology.
