木瓜软罐头胖听腐败微生物的分离和鉴定

摘    要:对引起木瓜软罐头胖听腐败变质的微生物进行分离鉴定及特性研究,从中分离得到3株腐败菌株S1,S2和S3。经过形态观察、生理生化检验、微生物鉴定等,表明:3株菌均为革兰氏阳性细菌、均能水解淀粉,甲基红实验均呈阴性,麦芽糖和葡萄糖发酵实验均呈阳性而蔗糖发酵实验中只有S1呈阳性,明胶液化实验中S1为阴性,S2,S3为阳性。依据试验数据绘制了三种菌的生长曲线和耐温性曲线,建立了一条检测木瓜软罐头中的腐败微生物的技术路线,为木瓜软罐头的防腐保鲜提供了重要的参考依据。

Abstract:Three bacterium(S1,S2,S3) were isolated from soft canned Papaya by morphology observation and physiological experiments,including morpho character,physiological and biochemical characteristics and microbial identification system.The result indicated that three bacterium were gram positive bacteria,they could starch hydrolysis,and methyl red test was negative,in maltose and glucose fermentation experiments,only S1 was positive,while in gelatin liquefaction experiments,only S1 was negative.According to experimental data,three bacterium growth curve and temperature curve were drawn.A new technical approach for testing spoilage in canned papaya was also established.The study provided important reference for the preservation of canned soft papaya.
