Abstract:Huaian mud eel dishes are quite popular in the Huaian Region of Jiangsu Province. They are prepared mainly with mud eel as the cooking material, but cooking methods are various and the complementary ingredients are differently chosen. Huaian mud eel dishes have a long history. With the excellent cooking techniques and specific flavor, they are really a wonderful work of Huaiyang Cuisine.
