摘    要:利用生物技术生产天然香料正在迅速扩大。在市场上 ,天然香料如香兰素、苯甲醛和癸内酯每年都有几千吨的产品。它们可以通过微生物、植物细胞或游离酶进行生物转化和从头合成而生产出来的 ,本文深入讨论生物技术在香精香料工业的应用前景

Abstract:More attention are being paid on the biotechnological generation of natural aroma compounds recently. Aroma chemicals, such as vanillin, benzaldehyde and decanolide are marketed on a scale of several thousand tons per year. Most of them can be produced by single-step biotransformations, bioconversions and de novo synthesis using microorganisms, plant cells or isolated enzymes. The perspectives of biotechnology for the flavors and fragrances are discussed.
