色彩色差计在面粉色泽测定上的应用

摘    要:本文介绍了色彩色差计的原理,测定方法,并用该仪器测定了全国主栽小麦品种30多个,确定了我国小麦的L*、a*,b*值范围,讨论了L*,a*,b*值与面粉色泽的关系。指出只有综合L*,a*,B*三个指标才能对面粉色泽作出正确判断。

Abstract:The principle and measuring method of Tristimulus colorimeter was introduced.About 30 principal cultured wheat varieties of China were determined with this instrument,and the data range of L *?a *?b * of Chinese wheats were made sure.The relationship between flour color and the data of L *?a *?b * was discussed,and pointed out that true judgment should work out only by colligating the three index of L *?a *?b *.
