摘    要:HACCP体系的标准理念就是监管前置,随着食品安全问题日益突出,我国目前的监管体制也逐渐由事后处置转为事前防范;庄河大骨鸡饲养场中建立HACCP体系,首先要对庄河大骨鸡养殖环节的工艺流程进行危害分析,找出可能的潜在危险,提出控制危害的预防措施,通过HACCP体系有效运行,确保禽肉产品的安全及原有风味。通过多年对庄河大骨鸡的养殖、提纯复壮、总结了一套饲养管理的HACCP操作规程,为庄河大骨鸡这一辽宁著名品牌的可持续发展提出可行性建议。

Abstract:Pre-reguladon is the main idea of HACCP food safety system. In recent years, pre-regulation has replaced an after disposal. Zhuanghe Dagu chicken breeding is a famous brand of Liaoning province. To establish a HACCP in Zhuanghe Dagu chicken farm, hazard analysis and effective measures have been dome firstly. Food safety and original flavor have been ensured by running HACCP. In this study, an operation procedure was given by application of many years. Some suggestions were given in this report about sustainable development of Zhuanghe Dagu Chicken breeding firstly.
