摘    要:海参是一种重要海珍品,具有独特的营养和市场价值。通过对我国海参的养成和加工情况的分析和评价,特别是对海参的营养功能和加工方式的详细论述,更加确定了海参是典型的的营养保健食品。海参的独特性质与其特殊保健作用密切相关,通过海参的精深加工,可以制成多种保全海参活性营养、易于吸收利用的高科技产品。随着海参加工工艺的进一步研究,海参的产品种类将越来越丰富,可以使更多的人认识海参的药用价值和营养价值。

Abstract:The sea cucumber is an important kind of sea cherish food as well as special market value,it is indeed a typical nutritient food according to our analysis and evaluation on aquaculture and processing style.On the other hand,the sea cucumber is a typical nutritional health food with high protein,low fat,low sugar and less cholesterol because there are many active components in them.The unique characters of sea cucumber has close relation to its special health action,therefore sorts of high-tech products of sea cucumbers that can be easy to assimilate and keep nutritional action through precise and deep processing.With the further study in precise and deep processing of sea cucumber,more and more peaple home and abroad can know the value in use of pharmacy and nutrition.
