云南烟区烤烟‘KRK26’中部叶片质体色素在烘烤中降解产物的种类、含量及其相关性

探索云南烟区‘KRK26’叶片质体色素在烘烤中的降解特征，为其香气品质评价和烘烤参数优化提供参考。基于气-质联用法研究云南玉溪烟区津引烤烟‘KRK26’中部叶片质体色素在三段式烘烤中降解产物的种类、含量及其相关性。结果表明：在烘烤中，‘KRK26’类胡萝卜素的主要降解产物有11种，叶绿素的有3种。β-大马酮、β-二氢大马酮、二氢猕猴桃内酯、巨豆三烯酮1、2、3和4、金合欢基丙酮和茄酮含量的最高值均出现在干筋期，3-羟基-β-二氢大马酮和3-氧代-α-紫罗兰醇的均在定色前期，吡咯、新植二烯和呋喃的分别在变黄前期、定色后期和变黄中期。类胡萝卜素和叶绿素不同降解产物含量间的差异、类胡萝卜素降解产物含量在烘烤不同阶段间的差异均达到极显著水平，但叶绿素降解产物含量在不同阶段间的差异未达到显著水平。质体色素降解产物的含量间存在极显著、显著、不显著正相关或显著、不显著负相关。类胡萝卜素的优势降解产物在各烘烤阶段均主要为茄酮、总巨豆三烯酮、金合欢基丙酮和β-大马酮，叶绿素的为新植二烯；新植二烯含量占类胡萝卜素和质体色素主要降解产物总量始终分别在94.0%和89.8%以上。所以，新植二烯、茄酮、总巨豆三烯酮、金合欢基丙酮和β-大马酮是决定‘KRK26’香味品质的主要物质。
