葵花籽粕中蛋白质提取工艺的优化

摘    要:采用盐提法提取葵花籽粕中的蛋白质,以提取率为评价指标,采用单因素试验探讨NaCl浓度、料液比、提取温度、提取时间、pH值、提取次数对蛋白质提取率的影响,采用正交试验优化提取工艺。结果表明:葵花籽粕中蛋白质的最佳提取工艺条件为NaCl浓度1.5mol.L-1、料液比1∶14(g.mL-1)、温度50℃、提取时间1.5h、pH值8、提取2次,此条件下蛋白质提取率为54.8%。

Abstract:In this study,we extracted the protein of sunflower kernel with salt extraction,took the extraction rate as an evaluation index,discussed the influence of NaCl concentration,solid-liquid ratio,extracting temperature,extracting time,pH value and extraction times on the extraction rate of protein,and optimized the extraction process using orthogonal test.The results indicated that the optimum extraction conditions of protein in sunflower kernel are: NaCl concentration 1.5mol·L-1,solid-liquid ratio 1:14(g·mL-1),extracting temperature 50℃,extracting time 1.5h,pH value 8,extraction times 2.The extraction rate of protein is 54.8% under these conditions.
