Effect of olive collection regime on olive oil quality

Abstract:The titratable acidity and the peroxide value of olive oil extracted from olives harvested by shaking the trees over subtented nets increase rapidly as the residence of the fruit on the nets is prolonged. It is recommended that the extraction of the oil from the fruits is not delayed for longer than 2 to 3 weeks.
