摘    要:我国的白砂糖产品SO2残留量普遍较高.本文经试验研究,分析了影响耕地白砂糖SO2含量的物理化学反应机理.认为导致糖浆和白砂糖SO2含量高的主要原因是甘蔗原料品质差,澄清工艺条件波动大,清汁胶体物、酚类色素和铁含量高,煮糖操作水平低.

Abstract:The residual content of the sulfur dioxide in granulated white sugar in our country is commonly high. The physical and chemical mechanism that influences the sulfur dioxide content in the plantation white granulated sugar is analyzed through the experimental investigation. The low quality of the sugar cane, the high contents of colloidal substances, phenolic pigments and the iron, the great variations in clarifying operation conditions and the low level of pan boiling operation are the main factors which leads to high contents of sulfur dioxide in the syrup and eventually in the plantation white granulated sugar of our country.
