粮食中微量元素的健康风险评价

摘    要:采用湿法消解对市售面粉和大米进行处理,应用原子吸收分光光度计和流动注射氢化物发生器测定铜、锌、铁、锰、铅和砷6种重金属含量,应用健康风险评价模型对粮食中重金属可能引起的健康风险进行定量评价,结果表明金属砷和锌所引起的综合健康风险水平较高。

Abstract:Flour and rice was digested with wet nitration, the content of Copper, Zinc, Iron, Manganese, Lead and Arsenic were determined by atomic absorption spectrophotometer and flow injection hydride generator, and evaluate the health risks may be caused heavy metals in food with health risk assessment model, the results showed that the overall health risk caused by Arsenic and Zinc metal levels are higher.
