摘    要:通过单因素实验和正交试验设计,研究了乳糖、脱脂乳粉、蔗糖和抗坏血酸钠等4种物质对保加利亚乳杆菌的冻干存活率及菌粉活菌数的影响,确定了适合保加利亚乳杆菌的最佳冻干保护剂配方.结果表明,4种物质的保护效果依次为:蔗糖〉脱脂乳粉〉抗坏血酸钠〉乳糖;最佳保护剂的配方为:30%蔗糖+209/6脱脂乳粉+4.0%抗坏血酸钠+20%乳糖.加入冻干保护剂后,保加利亚乳杆菌冻干后存活率可达94%,菌粉的活菌数达1.926×10^11 cfu/g.

Abstract:The effect of Lactose, skim milk powder, sucrose and sodium ascorbate on survival and viable cells of freeze-dried Lactobacillus bulgaricus was studied by single factor and or- thogonal experiments. The results were as follows: the order of the influencing factors was sucrose〉skimmed milk powder〉sodium ascorbate〉Lactose. The best cryoprotectants in- gredient was:30%sucrose+20% skimmed milk powder+4.0Gsodium ascorbate+20%Lac- tose, the survival rate and viable counts of Lactobacillus bulgaricus during freeze-dried is up to 94% and 1. 926×10^11 cfu/g when were added to the cryoprotectants.
