摘    要:传统"食品工程原理"课程教学存在理论性强、内容繁杂、实践教学环节缺失等问题,与新工科理念相去甚远。针对以上问题,对"食品工程原理"课程体系进行重构,将最新知识、技术嵌入到课程体系中,利用"学习通"智慧教学工具构建移动学习平台,培养学生"课前课后、线上线下"自主学习习惯。教学中,引入"以问题为导向"的PBL教学方法和"以学生为中心"的翻转课程教学手段,激发学生自主学习兴趣,提高学生独立思考、团队协作和表达沟通能力。实践中,整合实验内容与项目,构建分层次实验教学体系,实施开放式实验教学,建立过程和结果并重的综合考核模式,调动学生的主动性,培养学生的创新思维与实践操作能力,强化学生的工程意识。

Abstract:The traditional teaching of Principles of Food Engineering existed some problems,such as strong theory,complex contents and lack of practical teaching,which were far from the concept of the emerging engineering.This review analyzed the above problems in detail,reconstructed the course system of Principles of Food Engineering by inserting the latest knowledge and technology into the course system,build a mobile learning platform by using’Learning Through’intelligent teaching tools to cultivate the students’independent learning habits before and after class,online and offline.In teaching,problem-oriented PBL and student-centered flipped classroom teaching methods were introduced to stimulate students’interest in independent learning and improve their ability of independent thinking,teamwork and expressive communication skills.In practice,experimental contents and projects were integrated,a hierarchical experimental teaching system was built,open experimental teaching was implemented,a comprehensive assessment mode with equal emphasis on process and results was established,which were of great help in arousing students’initiative,cultivating students’innovative thinking and practical operation ability,and strengthening students’engineering ability.
