摘    要:采用福斯NIRS DS 2500近红外光谱仪及福斯数据处理软件,开发建立了黄酒酒母酒醅的酒精度和总酸的快速检测方法。通过对盲样进行预测,酒精度平均标准偏差为0.30%vol,总酸平均标准偏差为0.14 g/L,确认近红外光谱技术可以用于黄酒酒醅的快速检测。

Abstract:A rapid detection method of alcohol content and total acid in fermented grains of Huangjiu was developed by using Foss NIRS DS 2500 near infrared spectrometer and Foss data processing software.By predicting the blind samples,the average standard deviation of alcohol content was 0.30%vol,and the average standard deviation of total acid was 0.14 g/L.It was confirmed that near infrared spectroscopy could be used for the rapid detection of the fermented grains of Huangjiu.
