Abstract:Objective To improve the stability of nisin in industrial production by studying the effects of temperature,pH and acid on the stability of nisin.Methods A method for rapid determination of nisin titer by HPLC was established and its reliability was verified.Nisin solution was prepared and placed at different pH and temperature,and the potency was regularly monitored.Nisin products were prepared with different acids,and the potency was regularly monitored.Results The standard curve of nisin showed good linearity and reliable accuracy.Nisin had good stability under the condition of pH less than 4.0,and had the best stability at pH 2.0.The lower the temperature was,the more stable the aqueous solution was.Compared with the control group,the stability of nisin products prepared with lactic acid and phosphoric acid was significantly improved.Conclusion Nisin is relatively stable at low pH and low temperature.The preparation of nisin finished products with lactic acid and phosphoric acid can improve the stability.
