响应面优化茄子皮色素的提取及抗氧化性研究

摘    要:通过对提取溶剂,料液比,提取时间,提取温度首先进行单因素试验,然后通过使用响应面法优化了工艺参数,得到提取茄子皮色素的最佳工艺为料液比55:1,提取时间3h,提取温度30℃,使提取率提高了17.024%.还通过采用总抗氧化能力试剂盒(T-AOC)法对茄子皮色素的总抗氧化能力进行测试,结果显示其抗氧化能力为为3.13mg,具有良好的抗氧化功能.

The extraction and antioxidation properties of pigment from eggplant skin
Abstract:This article through to the extraction solvent, ratio of liquid to material, extraction time, extraction temperature first carries on the single factor experiment, then by using response surface methodology to optimize the process parameters, obtained optimum extraction process of pigment from eggplant peel was: the ratio of solid to liquid was 55∶ 1, extraction time 3h, extraction temperature 30℃, to increase the extraction rate of 17.024%. The article also through the use of total antioxidant capacity Kit (T-AOC ) total antioxidant capacity of eggplant skin pigment method for testing, results showed that the antioxidant capacity of 3.13units / mg.
