| 摘 要： | 本文在测定豆渣化学组成及豆渣蛋白等电点的基础上，采用简单工艺提取豆渣蛋白，粗蛋白得主继９０％以上，蛋白中必需氨基酸齐全，可以替代部分动物蛋白，具有营养高，成本低，价格廉等优点。

| Abstract: | Soy bean dregs is a by-product of soya products, its protein content is about 20%. The paper presents the resarch of extracting protein from soy bean dregs. On the basis of the determination of the isoelectric point and chemical components of soy bean dregs, protein is extracted by alkaline method. The protein has the advantages of rich nourishment, less cost and lower price. |
