天然植物成分体外模拟胃液清除亚硝酸钠及阻断亚硝胺合成的研究

摘    要:本文从常见的12种天然植物中,筛选出清除亚硝酸钠和阻断亚硝胺效果均佳的四种原料,在体外模拟胃液(pH3.0、37℃)的条件下探讨其清除率及阻断率剂量效应关系和速度关系。结果表明:在体外模拟胃液的务件下,绿茶对亚硝酸钠的清除率最大(91.80%),大蒜对亚硝胺的阻断率最大(64.15%)。亚硝酸钠的清除率与其浓度呈正相关关系,但各自增幅不同,其中大蒜的增幅最大(95.80%)。四种天然植物成分对亚硝胺合成的阻断率与其浓度亦呈正相关关系,增幅最大的是绿茶(26.40%)。四种天然植物成分清除亚硝酸钠和阻断亚硝胺合成的速度趋势各不相同。

Abstract:The relationship for the cleaning and blocking rate of dosage and speed by four plant compositions screening from 12 natural plants were studied in this paper that had better effects on cleaning nitrite and blocking synthesis of nitrosamine under simulated human gastric juice in vitro. The results showed that the cleaning rate of the green tea was the biggest (91. 80%), the blocking rate of the garlic was the biggest (64. 15%).The cleaning nitrite rate present the positive correlation with the density, but each increasing degree was different, among them the increasing degree of the garlic was the greatest (95. 80%).The blocking rate for synthesis of nitrosamine also present the positive correlation with the density, the increasing degree of the green tea was the greatest (26. 40%). The speed trend of cleaning nitrite and blocking synthesis of nitrosamine by four natural plant compositions were different each other.
