| 摘 要： | 本文在所能收集到的酵母菌株中,针对其耐高温的性能及生产酒精的性能等进行了试验,筛选出两株耐高温的酵母菌株YY和WT,在高温40℃条件下和常温30℃条件下表现出相同的优良的出酒率。对其形态特征、培养特征、生理生化特征进行了研究,鉴定YY为葡萄汁酵母(S. uvavum),WY为酿酒酵母(S.cere(?)isiae)。以此为生产菌株,先后在NBS 16L自动发酵罐、160,000L发酵罐上进行了活性干酵母的小型和大型生产试验,研究了其发酵培养和干燥等工艺条件。此间共生产207吨耐高温酒精活性干酵母,其质量检验结果表明,生产工艺路线成熟先进,产品质量稳定可靠。

| Abstract: | Two strains of thermotolerant yeast YY(S.uravuin ) and WT (S. cerenisine) were selected and studied. They can ferment normally both at 40℃ and 30℃ with a high alcohol production rate. With two strains, studies were carried out for production of instant active dry yeast (IADY), including the optimum conditions of propagation and drying. During that, 207 tons of high-temperature-tolerant I-ADY for alcohol production was manufactured with a high quality,indicating that the technology was excellent and advanced. |
