摘    要:研究鲍鱼外套膜酶解物(AMH)及其不同分子质量组分的抗氧化活性。采用中性蛋白酶水解鲍鱼外套膜制得AMH,通过超滤得到分子质量分别为小于1kDa和1~3,3~5,5~10kDa的4种酶解物组分;考察AMH和不同分子质量组分的体外抗氧化活性。结果表明:AMH清除DPPH自由基、OH自由基和亚铁离子螯合能力的IC50值分别为11.76,12.07,4.04mg/mL;经过超滤分离后,其抗氧化活性明显增强,且1~3kDa分子质量范围组分的清除DPPH自由基和OH自由基能力最强,3~5kDa分子质量范围组分的亚铁离子螯合能力最强。

Abstract:To investigate the antioxidative activity of abalone mantle hydrolysate(AMH) with different molecular weight distributions,abalone mantle were hydrolyzed by neutrase.Hydrolysate was ultrafiltered and four kinds of fractions with molecular weight distributions of below 1 kDa,1~3 kDa,3~5 kDa and 5~10 kDa were obtained.The results of antioxidative activity assay show that IC50 value of DPPH radical and OH radical scavenging activity are 11.76 mg/mL and 12.07 mg/mL respectively,and IC50 value of ferrous ion chelating power is 4.04 mg/mL.The antioxidant activity of ultrafiltered AMH is higher than that of AMH,and the ultrafiltered fraction with molecular weight distribution of 1~3 kDa has the best DPPH radical and OH radical scavenging activity,and the 3~5 kDa fraction has the best ferrous ion chelating power.
