摘    要:鸡蛋作为一种普遍的营养品,其储存期和销售等级的快速准确检测对消费者和生产者均至关重要。利用方波伏安型电子舌对鸡蛋蛋清溶液进行检测,并利用哈夫单位的测定建立鸡蛋不同储存期和不同储存期下的等级与鸡蛋哈夫单位的对应关系。提取第一峰电流、第二峰电流、第二极小值电流作为特征值。分别利用主成分分析(PCA)和判别函数分析(DFA)对数据信息进行分析,DFA比PCA能较好地区分鸡蛋的储存期和等级,电子舌能够检测出鸡蛋储存期和销售等级。

Abstract:Pullet egg as a general nourishment ,rapid and accurate detection of its sales levels and storage life is important for consumers and producers. Egg white is detected by square wave voltammetry electronic tongue, at the same time, Haugh unit is tested by egg tester to establish correspondence with storage period and different levels of raw eggs. It is feasible to select the first peak current, the second peak current and the second minimum current as characteristic value. Then principal component analysis (PCA)and discriminant thnction analysis (DFA)are used to process the experimental data. The DFA is better than PCA in detection of egg sales levels and storage life.
