腐乳理化特性分析和模式识别研究

摘    要:分析了27种腐乳的理化特性,并以此为依据,进行模式识别研究,结果将27种腐乳聚成了四川腐乳和其他腐乳2类,在6个理化指标的基础上建立了3个主成分模型,并得到了腐乳的判别方利D=-0.080x1+1.746x2+0.396x3+0.348x4+0.140x5-0.322x6-0.580,总判别止确率为96.3%,为控制腐乳品质提供了一定的理论依据。

Abstract:Based on the analysis of physicochemical properties, 27 kinds of sufu were classified into two groups of Sichuan sufu and other sufu by pattern recognition. Three principal component models were constructed according to six physicochemical properties, and a discriminant equation of sufu, written as D = -0.080 X1 + 1.746 X2 + 0.396 X3 + 0.348 X4 + 0.140 X5 - 0.322 X6 - 0.580, was obtained with the total accurate rate of 96.3%. The equation could be used as a tool for quality control of sufu.
