秋葵中水溶性膳食纤维提取工艺研究

摘    要:以秋葵为原料,采用单因素和正交试验方法研究了提取温度、提取时间、料液比和提取液的pH对酸水解提取秋葵中可溶性膳食纤维的影响,并优化了酸水解法提取秋葵中可溶性膳食纤维的工艺。结果表明:酸水解法提取秋葵中可溶性膳食纤维的优化工艺条件为料液比1∶15(g∶mL)、pH 7.0、提取温度80 ℃、提取时间110 min,在此条件下的水溶性膳食纤维的得率为12.65%。

Abstract:Using okra as raw materials, the effect of extraction temperature, time, material-liquid ratio and pH on water-soluble dietary fiber extraction rate was studied by single factor and orthogonal experiments, and the extraction technology was optimized by acid hydrolysis method. Results indicated that the optimal extraction technological parameters for water-soluble dietary fiber were material-liquid ratio 1∶15 (g∶ml), pH 7.0, extraction temperature 80 ℃, time 110 min. The extraction rate of water-soluble dietary fiber was up to 12.65%.
