茶多酚-锌(Ⅱ)配合物的合成及抗氧化活性

摘    要:首次以信阳废次茶和氯化锌为原料,合成了茶多酚-锌(Ⅱ)配合物(TP-Zn),利用红外光谱、紫外-可见吸收光谱和热分析技术对其结构及性质进行表征和分析.以1,1-二苯基-2-苦苯肼自由基(DPPH.)、邻苯三酚自氧化反应产生超氧阴离子自由基(O2-.)和Fenton反应产生羟基自由基(.OH)为模型,用紫外-可见分光光度法分别测定茶多酚及其配合物对模型中DPPH.、O2-.和.OH的清除作用.结果表明:茶多酚-锌(Ⅱ)配合物清除DP-PH.、O2-.和.OH的能力强于茶多酚,其浓度与抗氧化活性呈一定的量效关系.

Abstract:The tea polyphenols-zinc(Ⅱ) complex was synthesized from Xinyang waste times tea and ZnCl2 for the first time,and its structure and properties were characterized by means of infrared(IR) spectrometry,UV-visible absorption spectrometry and thermal analysis technique.Superoxide free radical(O-·2) and hydroxyl free radicals(.OH) were produced by pyrogallol autoxidation reaction and Fenton reaction,respectively.The scavenging effects of tea polyphenols-zinc(Ⅱ) complex and tea polyphenols on DPPH·,O-·2and ·OH were detected by ultraviolet and visible spectrophotometry.The results showed that the scavenging activities of complex on DPPH·,O-·2and ·OH were stronger than that of the tea polyphenols and the antioxidant activity was dose-effect relationship with its concentration in the solution.
