| Abstract: | Concepts and principles of HACCP system were introduced, meanwhile producing of mineral water was ensured by establishing and applying the HACCP system. A detail idea of control and assay methods in mineral water pro- cessing was introduced. At last, a safety, high efficiency and high quality product could be obtained. |
