Determination of Nitrite in Bacon with 6-methylguanine Fluorophotometry

Protein of bacon sample was gotte by precipitation.After removing fat,it reacted with 6-methylguanine in acidic medium.The reaction product was hydrolyzed in boiling water bath,thus the amido was replaced with oxhydryl and produced 2-oxhydryl-6-chloropurine that gave out slight fluorescent.Due to the reduction of the fluorescent strength,a method to detect nitrite with losing fluorescent is set up.In the experiment,the detection limit of nitrite was 6.9×10-3μg·L-1.The linear range of nitrite was 0.01~0.8μg·L-1.The recovery was between 94.35% and 100.74%.
