Abstract: | Quality Control of Sea-Frozen Fish in the Modern Fish-Industry Attempts have been made to show the importance of elaborate controlling machines in the manufacture of deep-frozen products from sea-frozen material (filet pieces from Jackstone vertical frosters). In order to direct the entire production from the viewpoint of food hygiene and economy, the quality control is accomplished in the ?Nordsee”? starting right from processing of fish and fish parts on the board itself (board control). The series of controlling operations are carried forth with repeated recheckings (using statistical and analytical methods) of the various processing steps (control steps), e. g. landing of sea-frozen material (discharge control), low temperature intermediate storage (control at intermediate production stage), manufacture of the corresponding finished product (control at production stage), and finally despatch of the deep-frozen product to the customer (control during storage of the finished product). |
